This is one of my quick & simple yummy kids’ tiffin recipes with bread prepared in just 10 minutes. I often make it at home for my kid’s school tiffin. This is also an Indian style breakfast recipe. Prepared with chopped bread slices and assorted veggies, tossed or stir-fried with onion and Maggi masala, that’s it. If you do not have maggi masala, you can simply use garam masala powder, pizza herbs or pav bhaji masala. Not only for breakfast, even you can also make it as an evening snack. You can even make this snack to pack the adults’ lunchboxes, too. The most important part of this recipe is that it is not only ready in just 10 minutes, but also serves for 2-3 kids’ lunch boxes at a time, only with a few bread slices.
Well, this recipe totally contains vegetarian and vegan ingredients. So Vegetarians and vegans can also have it for breakfast. Even though it contains many varieties of veggies, less oil and a little spices, this is also very healthy food. So feel free to give your kid such wholesome food in tiffin or breakfast if he can properly chew the food. However, if your kid is a toddler, then surely supervise him while he is eating to prevent choking. To make it more healthy, you can use whole wheat bread (atta bread) or multi-grain bread too. Here you can also use leftover bread, day old bread; well, then check the expiry date before using.
When Abhi (my son) was almost fed up with having sandwiches in school’s tiffin then I started making such bread recipes for him. My son was very happy to have such delicious tiffin, and his tiffin box came back empty. I was also very happy to make such a quick and easy, yummy yet healthy tiffin for him on a busy school day morning. Seeing my son’s happiness and empty tiffin box further motivated me to make such many new and unique recipes with bread.
This recipe idea mainly came to my mind from Dhiman’s (my husband) childhood memory. When he was a kid, he often had a similar tiffin in his private tutor’s house called this recipe bread hotchpotch. His private tutor’s wife(aunty) usually makes this tiffin for her entire family, including the kids who come for tuition at her house. How nice the gesture was, right?.
Though today I am using the same idea of using bread slices, however, this recipe is completely different as discussed above. Because neither I had such tiffin ever before nor Dhiman can remember much about the recipe, not even about how was the taste. So, I prepare it in my way.
Though, except for bread hotchpotch, I too do not have the perfect name for this recipe. Seems this recipe is quite similar to masala bread or bread upma too, as per my knowledge. You can even give it a good name which suits you well.

4 Bread Slices
1 Onion(Medium)
1 Carrot(Medium)
7-8 Beans
1/4 of a Capsicum
1 Green Chilli
1 Maggie Masala Packet
1/2 tsp Salt
3 tbsp Vegetable Oil
Cut the bread pieces with a knife or tear the bread with hands into small pieces.
Heat a pan, and add oil. Once the oil gets hot, fry 1 finely chopped onion for 30 secs.
Then add 1 carrot(finely sliced or grated), 7-8 finely chopped beans, and 1/4 of a capsicum(finely chopped) to the pan. Slightly fry with the onion.
Add 1/2 tsp salt, mix well, cover the pan and cook the veggies for 2 mins on low heat.
Then remove the cover and add 1 green chilli(chopped), stir well again.
Cover the pan and cook until the veggies are perfectly cooked.
Once veggies get soft, add a Maggie masala packet, and mix well. If you do not have Maggie masala at home, you can use 1/4 tsp garam masala powder or 1 tsp pav bhaji masala, which also tastes great.
Then add the bread pieces to the pan. Add 3/4 tsp of black pepper, and mix well.
Raise the heat to medium and fry the bread pieces. Stir until the bread gets slightly brown.
With 1 minute of frying with frequent stirring of the bread, this tiffin will be ready.
Lastly, sprinkle a handful of chopped coriander leaves over the bread hotchpotch and pack in a tiffin box.
