Soft & juicy smokey flavoured restaurant style best Tandoori Chicken, easy to make at home in tawa or grill pan on gas stove(without tandoor oven), simple step by step recipe with pictures.
Take Kasuri methi, Black cardamom, Green cardamom, Cinnamon, Cloves, Mace, Nutmeg, Hing in a grinder jar. Grind it to make a fine powdered tandoori masala.
Chicken legs with thighs/ breast pieces(washed), make 4-5 slits, marinade with lemon juice, red chilli powder, salt & vegetable oil. Mix well. Rest it for 30 mins.
Marinade with ginger- garlic paste, red chilli-Kashmiri chilli-turmeric-pepper-cumin-coriander powder, salt- black salt, tandoor masala, chaat masala, hung curd & mustard oil.
Lastly marinade with dry roasted gram flour or besan or even sattu & red food colour. Mix well & marinade for 2 hrs.
Place a bowl with burning charcoal & ghee in marinated chicken, once smoke starts, cover it for 10 mins to absorb it by chicken to get restaurant style smokey flavour.
Heat a pan on gas stove, with butter, roast the chicken pieces with its masala, cover the pan for 10 mins. Turn the chicken & cover it & roast it again for more 10 mins.
Heat a grill pan/griddle on gas oven, grease it with butter. Once the butter melts, grill the chicken from both sides, with brushing butter to make it like restaurants.
Restaurant style delicious tandoori chicken is ready, serve it with sprinkle of chaat masala, wedges of lemon, onion salads & Green chutney.
