This Chicken pulao is an Indian chicken pilaf/pilau recipe prepared in one pot by cooking rice in chicken stock with flavourful spices, easy to make at home by simple steps.
Wash the rice(basmati /pulao rice) for 4-5 times, soak it in water for 30 mins. Keep it aside.
Take chicken (only legs or legs with boneless pieces), put it in a pan/pot with all other ingredients used in making Yakhni /stock. Cook until chicken gets soft.
First separate the chicken pieces, then strain the yakhni to get a clear stock. Chicken Yakhni or stock is ready for cooking pulao in it. Keep it aside.
Ground whole black peppercorn, cardamom, nutmeg & mace in a grinder or a mortar-pestle until form a fine powder. Pulao masala is ready. Keep aside.
Heat the same pan or pot, add ghee, fry sliced onion in it until golden, add green cardamom, cinnamon, & cloves.
Add ginger-garlic paste & fry it well, add well-beaten curd with ground pulao masala & chicken. Fry it well & then add salt.
Fry the masala until raw smell goes off, drain the rice & add it to the pan. Mix it gently. Add 5 1/2 cup water including stocks. Keep the heat high to bring it boil.
Once it starts boiling, slow down the heat to its min. & cover the pan with a light lid. Cook it for exact 15 mins, then turn off the heat.
Keep it in 5 mins standing time, then Our one pot chicken pulao aka chicken pilaf is ready to serve.
Best to serve this chicken pulao with salad or raita by sprinkling beresta/crispy onion on its top. However you can serve it with any non veg curry.
