Make kolkata restaurant style best aam panna at home with raw green mangoes, sugar/jaggery, salt & roasted spices with following simple steps and pictures.
Wash & peel out the mangoes, cut into long slices. Put it into pressure cooker with water, add salt.
Put the pressure cooker on high flame, make 3-4 whistles. Turn off the heat, Once the cooker cools down, remove the boiled mangoes from it.
Dry roast the cumin seeds, whole pepper, and dry red chilli in low heat. Ground to a fine powder once cool down.
Take a blender jar, add boiled mangoes, a handful of mint leaves(pudina), roasted ground spices, black salt, chaat masala, regular salt, sugar & little chilled water.
Blend it well until get a smooth puree or paste. Add more water & ice cubes, even add more salt & sugar as per taste. Again blend it well & creamy, juicy, delicious Aam panna is ready.
Best to serve aam panna aka mango panna with ice cubes, garnish with mint leaves, by sprinkling roasted ground spice over the drink.
