Chilli chicken is an Indian Chinese restaurant style recipe made by crispy fried chicken tossed in sweet & spicy sauce with few veggies, easy to make at home with simple steps.
Clean & wash chicken pieces, soak it in lukewarm water with vinegar. This method will help to make the chicken soft & tender, and remove its raw smell.
Drain the chicken well & marinate it with eggs, ginger-garlic paste, salt, pepper, corn flour & all purpose flour.
In a mixing bowl add tomato ketchup, soya sauce, red chilli sauce, vinegar, chilli flakes, black pepper & salt, mix it well. Sauce is ready for making chilli chicken recipe.
Heat deep fry pan / chinese wok with enough oil, fry the marinated chicken until golden & crispy.
Heat the same pan/wok with little oil, fry chopped garlic & ginger for few secs, then fry onion & capsicum with green chillies.
Toss the veggies in chilli chicken sauce for 1 min, add chopped spring onion & black pepper, fry it for 30 secs & our dry chilli chicken is ready.
For making semi gravy, add 1 1/2 cup of corn flour mixed water to the pan, cook it for 1 min on high flame, add salt & spring onion, mix well. Chilli chicken is ready with a semi gravy.
For making curry like gravy, add 2 1/2 cup of corn flour mixed water, cook it for 1 min on high flame by adding salt & spring onion. Chilli chicken is ready with curry like gravy.
Best to serve this chilli chicken with chinese style vegetable fried rice or noodles. However you can enjoy the dry chilli chicken as starter/appetizer.
