Bengali Vegetable pulao recipe aka Bengali vegetable fried rice recipe

About this vegetable pulao

Bengali vegetable pulao is an Indian style fried rice recipe prepared by veggies & white rice in ghee & whole garam masala, easy to make at home by simple steps.

For making rice 2 cups Long Grain Basmati Rice  Water 1 tsp salt.

Ingredients of vegetable pulao


Vegetables used 1 1/2 cup carrot  1 1/2 cup beans 1/2 cup green peas 1 green chilli

whole garam masala 1 1/2 inch cinnamon stick 5 cloves 5  green cardamom(crushed) 3 bay leaves


Other ingredients a handful of cashew nuts a handful of raisins 1 1/2 tsp garam masala powder 8 tbsp sugar 3 tbsp ghee 2 tbsp refined oil salt(as required)


Rinse the rice, soak it in water, drain well & cook it in boiling water along with salt, cook it until 80% done, drain the starch, spread it in a plate.

Preparing veggies

Wash & cut the carrots & beans, wash green peas, blanch it in boiling water along with 1 1/2 tsp sugar & 1 tsp salt, once half cooked  then strain it well.

Tempering spices

Heat a pan in medium heat, add oil & ghee, tempering whole spices in it until aroma comes out.

Frying veggies

Add veggies, fry it about 3-4 mins, keep it in a side of the pan & fry the cashew nuts & raisins(washed), add chopped green chilli & fry it about 2 mins.

Fry the rice

Add the pre-cooked rice in pan in 3-4 batches, gently stir it, add salt & sugar, mix well, cover the pan & cook the rice on slow flame for 2-3 mins. 

Pulao is ready

Lastly add garam masala powder & ghee, gently mix it, cover the pan & turn off the heat.Our bengali vegetable pulao aka bengali vegetable fried rice is ready.

Best to serve this pulao aka bengali style fried rice with indian style veg or non veg side dish(contains gravy) or simply serve it with raita.
