I often make this vegetable rice for my kid’s lunch box. This is a 10-minute lunch box recipe for kids and adults. Made with leftover steamed rice is stir-fried in butter with mixed pizza herbs and lots of veggies. Kids will surely love it due to its pizza flavour. This is a great idea to feed veggies to kids and energise them with nutrients. This rice is healthy and tasty at the same time. If the rice were not delicious, my kid would surely not eat his lunch and would keep his stomach empty during school hours. Such a carbohydrate and vitamin packed rice in lunch supplies my kid lots of energy during school days. I prefer no side dish with this rice, except for his favourite sunny-side-up eggs or boiled eggs. Vegetarian people can pack onion or cucumber salad with it, but in a separate box.
Whenever I plan to make this vegetable rice for my kid’s lunch box, I always prepare the rice the night before and keep it in the refrigerator with a few chopped veggies (like carrots, beans and cauliflower). The next morning, I chop the onion, garlic and capsicum and start cooking.
First, fry all the veggies in butter, and lastly toss them with the rice and pizza herbs. This way, I can make my kid’s tiffin ready in just 10 minutes.
Carrot, beans, cauliflower, capsicum or bell pepper, onion, and garlic are fried all together until soft. Here, I use pre-cooked steamed rice (which we regularly eat at home). You can make it with freshly cooked basmati rice, brown rice, or any variety of boiled or steamed rice. Even can also apply this idea by using day-old leftover rice too.
However, making this recipe with boiled rice is not a good idea, especially if preparing for kids’ lunch in school. Because after cooling down, boiled rice tends to leave moisture that spoils the taste. However, if making with boiled rice, then only pack it for the office lunch if you can microwave the rice for a minute before eating. But remember, kids have no such options in school.
Here I blanch the cauliflower before use, the same way you can use broccoli instead. For flavour, I use pizza herbs and coriander leaves. If pizza herb is not available, you can use Maggi masala, garam masala powder, whichever is available at home.
Except for pepper, no spices are used, so you can pack this rice for your 3-year-old kid’s tiffin box or lunch box. However, toddlers need little supervision while eating the rice to avoid choking.

A bowl of steamed rice
1 Carrot
5-6 Beans
1/4 of Capsicum
7-8 small cauliflower florets
2 cubes of butter
1/2 Onion(chopped)
1 tsp Garlic(chopped)
3/4 tsp Black pepper powder
3/4 tsp Pizza Mix herbs
A handful of Coriander leaves
3/4 tsp Salt
Heat a pan, and add 1 cube of butter, once the butter melts, fry chopped carrot and beans by covering the pan for a minute.
After 1 min, add the small florets of cauliflower, stir well, add 1/2 tsp salt, again stir well.
Cover the pan and let the veggies cook for 1 min.
After 1 minute, remove the pan, add capsicum, stir well, again cover the pan and cook the veggies for 1 more minute.
Then add 1/2 roughly chopped onion and 1 tsp chopped garlic and mix them with veggies. Again cover the pan for 1 more minute.
Once the veggies get soft, then raise the heat and nicely fry the veggies until the cauliflower gets lightly golden brown.
Then add 3/4 tsp of black pepper powder, and 3/4 tsp pizza mix seasoning, and mix well.
In this stage add 1 more small butter cube, after a nice stir add the rice to the pan and mix well first.
Then add 1/4 tsp of salt, mix well and fry the rice for 1 or 2 minutes.
Lastly, add a handful of chopped coriander leaves and for the kid’s lunch box vegetable rice is ready.

To make it fresh for a long time(about 6-7 hours), use freshly cooked rice, before using completely cool down the rice so that would not stick to the pan.
If using day old rice kept in fridge, then microwave the rice first and keep it cool down, once comes to room temperature then use it, that rice never stick to the pan.
If rice is hot or cold, will release moisture while goes into the hot pan and will start sticking to the pan.
Even if somehow moisture exists in the rice or pack the rice too hot, that can release water after cooling down and can quickly get spoiled especially in summer.
