This is a super delicious & super simple soya chunks fried rice recipe which I often make for my kid’s lunch box. Made with precooked steamed rice, soya chunks or soyabean nuggets cooked with a few selected vegetables tossed in onion, garlic, tomato sauce, pepper, and garam masala powder. This is a complete meal, even adults also carry this rice for lunch in the office, not only that, you can also pack it for distant journeys, that’s a great idea. If you make this rice with precooked rice and preboiled soya chunks, together it does not take more than 10 -15 minutes to get ready. Due to being high in protein, this rice is super healthy and full of nutrition. Eating such healthy rice in tiffin makes my kid energetic during his school hours.
To make it quick and easy, I prepare the white rice & boil the soya chunks the night before and keep them in the refrigerator in an airtight container. I also cut the carrot and beans last night to save cooking time. This helps me to make the rice ready in 10 minutes. Sometimes I make this recipe with leftover rice to make a quick breakfast.
Try to use any variety of steamed rice, jeera rice, brown rice, basmati rice or atop chaal(if you are a Bengali) to get the best result. Boiled rice does not go well with this rice. Because boiled rice leaves moisture after it cools down, and that spoils the taste of this dish.
Soya chunks have a smell, even that smell stays after frying in oil. So to remove the smell here, I fry the soya nuggets with onion and garlic, tomato sauce and garam masala powder before mixing them with rice. Soya chunks soak up the extract of the spices during frying, making themselves flavorful, which makes the rice even more delectable after tossing with it. However, perfect frying of rice is also an important step; if rice is fried until it is dry. No moisture should exist in rice that can make it soggy. As a result, this will cause the rice to lose its water after cooling and make the taste bland.

Ingredients
200 g Soya bean Chunks / Soya Nuggets
1 Bowl of Precooked steamed Rice
Half Carrot
7-8 Beans
1/4 Capsicum/Simla Mirch
2 Green Chillies
1 Onion(finely sliced)
1 tsp Garlic Paste
1 tbsp Tomato Sauce
1/2 tsp Black pepper powder
1/4 tsp Garam masala powder
3/4 tsp Salt(as per taste)
3-4 tbsp Vegetable Oil
Method
- Boil the soya chunks until soft, drain well, and keep under running water to cool them down.
- After completely cooling down, squeeze the excess water from the soya chunks to make them dry.
- Heat a pan with the oil, fry the onion slices for about 1 min, then fry the soya chunks for the next 30 secs.
- Add carrot, beans, capsicum and green chillies to the pan.
- Stir well and fry for about 1 minute.
- Then add 1/2 tsp salt, 1/2 tsp black pepper powder,1 tsp garlic paste, and again fry it for 1 more minute.
- Then add 1 tbsp of tomato sauce or tomato ketchup, and mix well.
- Add 1/4 tsp garam masala powder. If you do not have garam masala, you can use Maggie masala. Stir well and fry for a few seconds.
- Then add a bowl of the rice(freshly cooked rice or precooked leftover rice) in 2 batches for good mixing.
- Next, add 1/4 tsp salt if it seems it requires.
- At this stage, keep the flame on high and fry the rice for 2-3 minutes with continuous stirring.
- After 3 minutes rice will be ready. Pack it for lunch with salad.
How to make Soya chunks rice step by step
Preparation
