Badam milk is a very popular South indian drink made with Almond(called badam in hindi) paste or powder, milk, cardamom powder, sugar, saffron and rose water. Since I came to Bangalore tasted badam milk many times in several shops. Loved the taste, started preparing at home. In wintertime I make hot badam milk and in summertime I make cold badam milk. Today I will show how to make an authentic badam milk recipe and an instant badam milk recipe with a few simple step by step methods.
To make a traditional badam milk, first soak the skinless almonds, then blend with whole milk, cardamom powder, sugar, saffron and rose water.
To make instant badam milk, dry almonds are ground with sugar, cardamom seeds and saffron strands to make a powder. Later, mix the powder with cold milk & rose water and blend or shake well and instant badam milk is ready in minutes.
Cold badam milk is the most popular drink in South India, especially on hot days of summer. However, hot badam milk is best in the winter to keep the body warm. You can get it in Bangalore and Hyderabad’s fruit juice shops, local bakeries and roadside falooda-making vans. This drink is highly nutritious and gives energy, so good for kids, young, old even for pregnant women.
Serve this almond drink after breakfast or lunch, not on an empty stomach or not after dinner. Because the combination of milk and almonds is not good for an empty stomach, and it would not be easy to digest at night before sleeping.
Milk – No matter if you are using full cream milk, toned milk or double-toned milk.
Almonds – You can use any quality of almond in this drink. However, before making the almond powder for the instant badam drink, wash the almonds and make them completely dry(preferably in sunlight) before grinding. Otherwise can not store the powder for a long time.
Cardamom(Green cardamom) – Cardamom is used for flavour. If using cardamom powder, then ratio will be 1/4 teaspoon cardamom powder is enough for 500 ml or half a litre of milk. Otherwise, only use cardamom seeds, not the skin, as I used in this recipe.
Sugar – Instead of sugar, you can use sugar candy(michhri in Bengali or mishri in Hindi) too, as per your sweet tooth. To cut down calories, can use honey or dates instead of sugar.
Saffron or Kesar – Badam milk looks yellow due to using saffron, saffron also mixes its flavour to this drink. If you do not have saffron at home, you can also use saffron food colour, or you can skip this step.
Rose water – Rose water is not mandatory to add to this drink, however, the essence or flavour of rose water will give a feel of a royal drink.

22- 25 Almonds
500 ml Whole milk
6 tbsp Sugar
5-6 Green Cardamoms
18- 20 Saffron Strands
1 ½ tsp Rose Water
1. For making authentic badam milk, first, soak 22 -25 almonds in a bowl of water overnight or at least for 4-5 hours. Once the almond skin easily comes out means almonds are perfectly soaked.
2. Peel off the almonds skin and then blend the skin-out almonds with 3 tbsp sugar, 6 cardamom (use only seeds), and 18-20 saffron strands. Grind them well.
3. After grinding we will get a coarsely ground mixture and the mixture sticks to the sides of the grinder jar, first take a spoon and accumulate the mixture in the centre of the jar.
4. Then add 1/4 cup or 4 tbsp of milk to the mixture. Blend the mixture again to get a smooth paste and the badam milk mixture will be ready.
5. Next nicely mix this mixture with 1/4 cup of milk(milk should be at room temperature). Keep aside.
6. Now, take the rest of the milk(after using 1/2 cup from 500 ml) in a saucepan, and heat the milk on low to medium heat.
7. Once the milk starts boiling, pour the mixture into the milk, and mix it well. Then slow down the heat of the stove and let the milk start boiling again.
8. Once the milk starts to boil, check the sweetness of this drink. Here I add 3 tbsp of sugar as per my requirement. Then again let the milk boil for 2-3 mins or until the sugar melts and mix with the milk. Then turn off the heat.
9. Let the milk completely cool down(until comes to room temperature).
10. After cooling down, pour the milk into a blender jar, mix 1 ½ tsp rose water into it and blend it well. Though here rose water is not mandatory, however, blending is important. Blending helps to completely blend the saffron strands in this drink and makes this drink frothy as well as creamy. Finally, the badam milk is ready.
11. Now either pour the milk into a glass and serve it or keep it in the fridge for 1 hour and then serve it cool, choice is yours.
