How to make badam milk at home with simple step by step method

Badam milk is a popular South Indian drink with almonds, whole milk, sugar, cardamom, saffron and rose water. A super creamy delicious drink made with milk and surprisingly milk haters like me also feel a craving for it. You can get badam milk in Bangalore and Hyderabad in fruit juice shops, local bakeries and roadside falooda making vans. Though you can enjoy this drink at any time of the year, however, summer is the best time to have it.

The name “Badam Milk” comes from badam, the Hindi name of almond which is one of the main ingredients of this drink. A combination of whole milk and almonds makes this drink highly nutritious, and good for kids, young, old even pregnant women.

Badam milk is very easy to make at home, even you can make it in two methods. One is the traditional method and the other is an instant method. In the traditional method, first, you need to soak almonds overnight. The next morning you need to peel off the almonds’ skin and grind them with a little milk, sugar, cardamom powder and saffron. Then boil the mixture with whole milk and badam milk will be ready, cool it down and serve. To serve it cold, you can put it in the fridge for an hour before serving.

In the instant method, grind the almonds (washed and dried well in sunlight) with sugar, cardamom and saffron and make a fine powder. Our homemade instant Badam milk powder is ready, store this powder in an airtight container. When you urge for this drink, just mix 3 -4 teaspoons of this powder in each 250 ml amount of milk and boil it. Then cool down the mixture and instant badam milk will be ready to serve. Before serving, you can blend the milk with 3/4 tsp rose water and keep it in the fridge for one hour.

However, must serve this badam drink after breakfast or lunch, not on an empty stomach or not after dinner. Because the combination of milk and almonds is not good for an empty stomach and it would not be easy to digest at night.

Ingredients to make badam milk

Milk – No matter, if you are using here full cream milk, toned milk or double-toned milk.

Almonds – You can use any quality of almond in this drink. However, before making the instant badam milk powder, wash the almonds and make them completely dry(preferably in sunlight) before grinding. Otherwise can not store the powder for a long time.

Cardamom(Green cardamom) – Cardamom is used for flavour. If using cardamom powder then 1/4 teaspoon is enough for 500 ml or half litre milk. Otherwise only use cardamom seeds, not the skin as I did in this recipe.

Sugar – Instead of sugar you can use rock sugar(michhri in Bengali or mishri in Hindi) too as per your sweet tooth.

Saffron or Kesar – Badam milk looks yellow due to using saffron, saffron also mixes its flavour to this drink. If you do not have saffron at home, can also use saffron food colour or you can skip this step.

Rose water – Rose water is not mandatory to add to this drink, however, the flavour of rose water will give a feel of a royal drink.

A popular South Indian drink is Badam milk made with almonds, whole milk, sugar, cardamom, saffron and rose water(optional).

Ingredients of Badam milk

  • 22- 25 Almonds

  • 500 ml Whole milk

  • 6 tbsp Sugar

  • 5-6 Green Cardamoms

  • 18- 20 Saffron Strands

  • 1 ½ tsp Rose Water

Directions

  • For making badam milk, first, soak the almonds in a bowl of water overnight or at least for 4-5 hours. Once the almond skin easily comes out means almonds are perfectly soaked.
  • Peel off the almonds’ skin and then blend the skin-out almonds with 3 tbsp sugar, 5-6 cardamom (use only seeds), and 18-20 saffron strands. Grind them well.
  • After grinding we will get a coarsely ground mixture and the mixture sticks to the sides of the grinder jar, first take a spoon and accumulate the mixture in the centre of the jar. 
  • Then add 1/4 cup or 4 tbsp of milk to the mixture. Blend the mixture again to get a smooth paste and the badam milk mixture will be ready. 
  • Next nicely mix this mixture with 1/4 cup of milk(milk should be at room temperature). Keep them aside.
  • Now, take the rest of the milk(after using 1/2 cup from 500 ml) in a saucepan, and heat the milk on low to medium heat.
  • Once the milk starts boiling, pour the badam milk mixture into the milk, and mix it well. Then slow down the heat of the stove and let the milk start boiling again.
  • Once the milk starts to boil, check the sweetness of this drink. Here I add 3 tbsp of sugar as per my requirement. Then again let the milk boil for 2-3 mins or until the sugar melts and mix with the milk. Then turn off the heat.
  • Let the milk completely cool down(until comes to room temperature) and initially, badam milk is ready. 
  • However, after cooling down, I pour the milk into a blender jar, mix 1 ½ tsp rose water into it and blend it well. Though here rose water is not mandatory, however, blending is important. Blending helps to completely blend the saffron strands in this drink and makes this drink frothy as well as creamy. Finally, my version of badam milk is ready.
  • Now either pour the milk into a glass and serve it or keep it in the fridge for 1 hour and then serve it cool, choice is yours.
  • How to make Instant badam milk
  • For making instant badam milk, first, we will make instant badam milk powder. For making instant badam milk powder, take the 22- 25 almonds (preferably washed and dry in sunlight), 6 tbsp sugar, 5-6 cardamom seeds and 18-20 saffron strands in a grinder jar and grind them well to make a fine powder.
  • Homemade Instant Badam milk powder is ready, store this powder in an airtight container.
  • For making badam milk with this instant powder, just mix 3 -4 teaspoons of this powder in each 250 ml amount of milk and boil it.
  • Then cool down the mixture and instant badam milk will be ready to serve.
  • To get the best result, before serving, you can blend the milk with 3/4 tsp rose water and keep it in the fridge for one hour.

Notes

  • While boiling the badam milk must keep the stove flame to low and frequently stir the milk to avoid burning from the bottom of the saucepan. Try to use an aluminium saucepan, not a steel saucepan.
  • Can also use dry rose petals to make instant badam milk powder. Then you do not need to use rose water at last.
  • Try to blend the drink before serving giving the best result.
