All the Bengali jackfruit recipes, like Echor er dalna, echorer kofta, echorer dal, and even echor er Dhoka very common in my mom’s kitchen. She easily cut raw jackfruit/echor in boti(not a knife). As then readymade cut echor would not be available in the market. So I learned to cut jackfruit from my mom. Though I cut it in boti & knife both. However, today I cut it with a knife for your convenience.
Tips to cut raw (unripe) jackfruit
To cut a raw jackfruit, 3 things are required. 1. A sharp knife or boti, 2. Oil to grease your palms 3. Water
- Without using a sharp knife or boti, jackfruit cutting & peeling would be difficult.
- Unripe Jackfruit has sticky sap, which sticks to the hands and cutting tool, not easy to remove. Even quickly oxidizes(turned black). So to protect your hands from the sap must use oil(mustard oil/any vegetable oil). However, don’t grease the cutting tools(means knife or boti) before cutting, may slip & make deep wounds in your hands. Clean the cutting tool by greasing it with oil after the cutting is done. Then clean it with kitchen tissue or old newspaper.
- After cutting the jackfruit in half, wash it under running water to thoroughly clean up the sap. Then take a bowl of water, to keep the jackfruit pieces after cutting to prevent them from getting brown or black(due to oxidization).
Tips to store jackfruit (raw store-bought jackfruit cut into pieces)
Though except Kolkata, for the last few years, in Bangalore(HAL market), jackfruits are being cut(peeling & cutting into pieces) for selling. So people can directly cook it.
- However, after taking it home, you need to thoroughly wash it 5-6 times under running water to clear off its sap. Otherwise while storing in the refrigerator jackfruit will itself soak the sap and get bitter after cooking. Totally spoil your effort in cooking the curry.
- Always try to buy fresh cut jackfruit for the best taste.
- Even after boiling the jackfruit must taste its water, if the water tastes bitter, only use the jackfruit in the curry, not that water.

How to cut raw (unripe) jackfruit
- First, grease your palms with 1 tbsp oil (mustard oil or any vegetable oil) and take a sharp knife or boti (vegetable cutter in Bengali).
- Take the jackfruit, put it on news papercut it into halves, then again cut it half lengthwise.
- Wash it under running water to clean its sticky white sap.
- After cleaning all the saps. Cut each half into 3 cm thick slices, and peel out its skin with a sharp knife.
- Afterward, remove the hard stem part that comes in the middle of the jackfruit. Then cut it into 3-4 square pieces.
- Put it into the water to prevent it from oxidization (turning brown or black in the air).
- Now raw jackfruit(echor/kachcha Kanthal) is ready to use in any recipe.
- How to store jackfruit for making curry
- To store raw jackfruit, first, cut it into halves and completely remove the sap by cleaning it under running water or by taking water in a bowl.
- Leave it for 1 hour to release the remaining sap.
- Then again wash the sap away, and wipe out the water with tissue paper.
- Afterward, first, wrap it up with paper(newspaper/kitchen tissue).
- Afterward, wrap it in cling wrap or tie it in a polythene packet and keep it in the refrigerator’s vegetable basket for 4-5 days. Later cut it anytime when making the curry.
- Even you can store the jackfruit(cut into pieces) in an airtight container or in a zip pouch for 1-2 days.
- Even you may boil the jackfruit pieces and store them in the refrigerator in an airtight container((including the water if not bitter) for 1-2 days before making the curry.
Notes
- I forgot to put newspaper before cutting the jackfruit, but you must put it to prevent the floor from jackfruit sap. That sap is very hard to clean later.
- Cut it carefully to save your hands, especially your fingers.
- However, the more days you store the jackfruit, it will lose its firmness and quickly get soft & mushy while making the curry.
