This is a simple homemade vanilla ice cream recipe, very delicious, super creamy and easy to make at home. Prepared with full cream milk, milk powder, fresh cream, and vanilla essence. I use no whipping cream, no heavy cream, no eggs, no custard powder, no condensed milk, no cornflour or gelatin, and no CMC or GMC powder. Even without using an ice cream maker or churner, just using a simple blender results me shops like soft, creamy and classy tastes.
To make this homemade vanilla ice cream, I used my homemade condensed milk, which I made with milk, milk powder, and sugar. Then blend that condensed milk with fresh cream and vanilla essence, and chill in the refrigerator. That’s it, and the result is in front of you.
We thought store-bought vanilla ice cream was prepared with only 3 ingredients. 1. Condensed milk, 2. dairy or non-dairy cream and 3. the vanilla flavour or essence. But the truth is, they also mix some stabilizers like CMC powder (Carboxy methyl cellulose) or GMC powder. Even people who make it at home mostly use cornflour, corn syrup, gelatin or custard powder as a good stabilizer, a great substitute for CMC or GMC powder. The stabilizer does not let the ice cream easily melt even after keeping some time outside the freezer.
However, I do not think a stabilizer is important in ice cream when you are making it at home. More than that, Ice cream must need cream to be made. Without cream (fresh cream, heavy cream or any non-dairy whipping cream) if making ice cream, ice crystals will certainly form into the ice cream base. Due to these ice crystals naturally you not be able to get a store-like creamy texture and taste, right?
Even traditionally, the store-bought ice cream is prepared with repeated churning in a machine which makes it soft and creamy. However, I do not have an ice cream maker at home so I applied a simple method. There is no need for repeated churning to make this ice cream. Just one-time use of a simple blender(or juicer jar used in the kitchen) perfectly works.
Vanilla ice cream is my all-time favourite. I love to mix a scoop with my homemade cold coffee or my son’s favourite Oreo milkshake. I even love to have a scoop on the top of my hot Chocolate Brownies too. How do you enjoy vanilla ice cream?
I always store a bucket of vanilla ice cream in my freezer throughout the year. However, my kid’s ice cream consumption increased during these summer holidays, so that bucket quickly gets finished in no time. Despite this, he is spending all his pocket money buying ice creams. So I decided to make it often at home at least during this summer holidays. While making it, I thought to share this recipe with you. Hope this will help you if you want to make it.
Ingredients to make homemade vanilla ice cream
Full cream milk – Full cream milk is a must ingredient I use to make any ice cream. The fat content of full cream milk will make a soft and creamy base of ice cream. Always remember, the more fat content you use in your ice cream the creaminess of your ice cream will increase.
Milk Powder– I use milk powder for making my homemade condensed milk, one of the key ingredients of this ice cream. However, milk powder is another fat content.
Sugar – You need sugar to make homemade condensed milk. But if you are using store bought condensed milk(Indian brand known as milkmaid) then do not use sugar that makes the ice cream more sugary.
Fresh cream/ Heavy cream/ Whipped cream – Here I have used fresh cream. Generally, ice cream makers use heavy cream or whipping cream instead as it already contains good stabilizers. But if you are using whipping cream, use less sugar as whipping cream also contains sugar.
Vanilla essence – Instead of regular vanilla essence here I have used white vanilla essence. Basically I used it for making the ice cream milky white like we buy from shops. However, if you are not sceptical about its texture you can use the vanilla bean or regular vanilla extract. Do not worry that will give you the same taste.

Ingredients of Homemade Vanilla Ice Cream
2 cups(500 ml) Full Cream Milk
100 g Milk Powder/Dairy whitener
100 g Sugar
2 tsp Vanilla essence
250 ml Fresh cream
Method
- To make this vanilla ice cream, first, we will make homemade condensed milk.
- So first take 500 ml of milk(2 cups of milk) in a pan, add 1/2 cup (around 100 g) of milk powder and 1/2 cup (100 g) of sugar.
- Mix them well, no lump should be in the mixture. You can even strain the mixture before use to make sure there is no lump.
- Start boiling the mixture on medium heat, once the milk starts to rise, then slow down the heat and keep your gas oven at a minimum temperature. At the minimum temperature, milk would not rise up and not easily get burnt.
- But continuously stir the milk while cooking. Always scrape the milk from the sides and bottom of the pan to avoid burning.
- Cook the milk until the milk is reduced to half of its actual amount. This means 2 cups of milk will be reduced to 1 cup and it will take hardly 20- 30 minutes. Then condensed milk will be ready. Then Turn off the heat.
- Wait until the condensed milk is completely cooled down. You can keep the milk under the running fan if you want to quickly cool it down.
- Once the condensed milk cools down and comes to room temperature. Then take the blender or juicer jar, pour the condensed milk into the blender or juicer jar, and add 250 ml of fresh cream and vanilla ice cream essence. Then blend it well until the mixture is smooth and lump-free.
- Pour the mixture into an airtight container, first cover the container with cling wrap and then cover the container with its lid. I used Cling wrap to make it more airtight which helps to quickly set this ice cream. If you do not have cling wrap, you can skip this step.
- Now put the container in the freezer for 6- 8 hours or overnight. If your freezer is in the highest cooling mode then ice cream might be set in less than 8 hours.
- Once the ice cream is ready to eat, take it out of the freezer and enjoy.
Notes
- If you are using toned milk or double-toned milk then use a little more milk powder or a little more cream (around 50 g more) to bring more fat content in your ice cream. As more fat content you will use in your ice cream, it will be more soft and creamy like stores. Otherwise, ice crystals may appear in your ice cream, won’t get ice cream shop like a soft creamy texture.
