Veg fried rice is basically a garlic flavored Chinese stir-fried rice with few vegetables, soya sauce, and white vinegar. The wonderful aroma which comes from putting garlic in the hot oil at the beginning adds an extra flavor and taste to this rice. Today I prepared this fried rice to relish with my Chilli Prawns.
For making this chinese fried rice, along with pre cooked basmati rice, I have used carrot, beans, capsicum or green bell pepper, spring onion and green chillies with some chopped garlic. Toss or stir fry the veggies with a sprinkle of black pepper and salt, with a few teaspoons of soya sauce and vinegar. Lastly, tossing the rice with veggies completes the dish. It can be easily prepared with leftover rice, too.

Basically, a wok is used to prepare any Chinese fried rice. However, I have no wok, so using a deep frying pan. Any Chinese dish is made over a high flame. So keep the flame on high while making this rice. Remember, here veggies or rice are not exactly fried, they are just tossed or stir fried in a little oil. Tossing or stir frying on a high flame keeps the veggies crunchy and the rice intact after cooking.
Chinese restaurants prepare this fried rice with jeera rice or small grain rice. I used basmati rice or long-grain rice. In restaurants, they cook in sesame oil, but I used refined oil. Do not worry, that does not change the taste.

For making rice
- 1+1/2 cups Basmati rice/Jeera rice
- 4 cups of Water
- 1 tsp Oil
- 1/2 tsp Salt
For Stirring the rice
- 2 tbsp Refined oil/Sesame oil
- 2 tsp Garlic
- 1/2 cup Carrot
- 1/2 cup Beans
- 1/2 cup Spring Onion
- 1/2 cup Capsicum or Green bell pepper
- 1 Green Chilli
- 1+1/2 tsp Soya Sauce
- 2 tsp Vinegar
- 1/2 tsp Black Pepper/White pepper
- A handful of Spring onions
- salt(as required)

How to cook the rice perfectly
- Thoroughly rinse the rice in water 4-5 times, then soak it in a bowl with fresh water for at least 30 minutes.

- After 30 minutes, take a wide vessel with 4 cups of water and put it on the high flame. And add 1 tsp oil and 1/2 tsp of salt to it. Salt will help to quickly reach the boiling temperature, and oil helps to keep the rice intact.
- Once the water starts boiling, strain the water from the soaked rice and add it to the boiling water.

- Let the rice boil at a high heat and cook the rice up to 80 per cent.

- Check the grain of rice by pressing it with your fingers; if the rice gets flat, not mashed. means rice is ready. As shown in the pics.

- Immediately drain the rice starch, use a strainer or use your traditional way to strain the rice.

- Then spread the rice on the large plates and place it in the air to prevent it from overcooking due to its inner heat.

- Once it cools down, keep it in a large bowl and cover it. And keep it aside for later.

How to stir fry vegetables with rice
- Heat a deep frying pan or wok on a high flame. Once the pan is hot, add 2 tbsp of oil to it.

- Once the oil releases smoke, add 2 tsp chopped garlic in the pan and sauté it for 30 seconds.

- When the aroma comes from the garlic, add 1/2 cup of beans to the pan (as shown in the pic), stir it nicely.

- Then add 1/2 cup of carrots(cut into small cubes) in the pan and sauté it for few secs.

- After that, add 1/2 cup of finely sliced capsicum in the pan as shown in the pic.

- Then add green chillies, stir them nicely. And then add 1/2 cup of finely chopped spring onion. Sauté it well.

- Then add 1+1/2 tsp of soya sauce and 2 tsp of vinegar to it as shown in the pic. Stir it well for 30 secs.

- When the raw smell of soya sauce goes off, add the rice to the pan and stir or toss it well. Mix the rice gently to prevent the rice grains from breaking or getting mashed.

- Now sprinkle 1/2 tsp black pepper or white pepper and salt(as per taste) from the top and mix it nicely by tossing or stirring. Stir fry the rice for 3-4 mins.

- Lastly, add, a handful of finely chopped spring onion leaves from the top and mix it gently and turn off the flame.

- Veg fried rice is ready, serve it with any Chinese or Indochinese gravy.
Tips
- While cooking the rice, always be there. Don’t overcook the rice, mushy rice will not give you the good result like Chinese restaurants.
- I add 1 tbsp oil while boiling the rice. It will help to keep every grain separated from each other, which means rice would not be sticky.
- While cooking, every ingredient should be ready in front of you. As I mentioned, the high heat was from the beginning to the end. Do not fry the veggies long, otherwise lose the crunchiness.
