This is my Indian version of Fish in creamy Lemon Butter Garlic Sauce recipe, which is super delicious, quick, and easy to cook. Fish in Lemon Butter Garlic Sauce is a continental dish made with boneless fish fillets, butter, garlic, lemon juice, fresh cream(however, I used milk) and pepper. This dish mainly serves with bread toast however, I serve it with Butter-tossed Herbed rice.
In Foreign countries, this dish is usually made with Whitefish fillets or Salmon fish fillets. However, I make it with basa fish fillets which is cheap and tasty at the same time. But if you do not like basa, you can use Bhetki fish (Indian seabass) fillets too. Well, when soft and juicy basa fillets are simply flavoured with butter, garlic and lemon (lemon juice and zest), you can not recognise it as basa fish, I bet. This is one of my favourite basa fish fillet recipes too.
Generally, Fish in Lemon Butter Garlic Sauce is made by shallow frying the fish or grilling in butter, later a sauce is made with lemon, garlic, butter, and fresh cream poured over the fried fish and served. However, after frying the fish fillets, I cook the fish in the lemon, garlic, and butter sauce for a few minutes, as we prepare curry in Indian cooking. Because it makes the fish softer and more flavourful what I was looking for.
Here I used frozen basa fish fillet which is easily available in Indian markets. The problem of using frozen fish fillet is, that you have to wait until it comes to room temperature. However, if you are using fresh fish fillets then can start cooking immediately.

Ingredients
350-400 g Basa Fish fillets
1 lemon juice
4 tbsp Butter
3 tbsp White Oil
4 tsp Garlic(finely chopped)
1/4 tsp Lemon zest
1/2 cup Milk
1 tsp Black Pepper(Powder)
1/2 tsp Dry Paseley(Optional)
A handful of chopped Coriander leaves
3/4 cup of Water
Salt(As per taste)
Directions
- Here I took a frozen basa fish fillet, I needed to wait until the fillets came to room temperature. Then I cut it into 5 pieces. You can cut it as per the size of the pieces you want.
- First I marinate the fish with half lemon juice, 1/2 tsp salt, 1/2 tsp pepper and 1/2 tsp garlic paste.
- Then heat a pan(I used a flat nonstick pan) on medium to low heat, and add 3 tbsp butter, once the butter melts add 3 tbsp white oil into the pan. Here oil is optional, you can fully make it with butter. Then, use 6 tbsp butter.
- Shallow fry the fish until both sides get a golden brown colour. Basa is very soft and tends to break while flipping so gently flip the fish. Each side will take hardy 7-8 minutes to get golden brown. Then take out the fish from the pan and keep it aside.
- Then in the same pan, add 3-4 tsp finely chopped garlic, and saute until golden.
- Add 1/2 cup(about 125 ml) milk, stir well, then add 1/2 tsp black pepper, 1/2 lemon juice, 1/4 tsp salt. Stir them well and our lemon butter garlic sauce is ready.
- Then grate a lemon skin to add a little lemon zest(about 1/4 tsp) to the sauce, and mix the lemon zest with the sauce.
- Next, add 3/4 a cup of water to the pan. Mix the water well with the sauce.
- Then I add 1 tbsp butter to the pan, while the butter is melting add 1/2 a tsp of dry parsley (optional). Mix well. Let the gravy boil.
- Once the gravy starts boiling add the fish into the gravy. Here gravy is less and basa fish is very soft and tend to break while flipping so I do not flip the fish while cooking in the gravy. Rather I pour a little gravy or sauce from the top of each fillet to cover the fillets so that fillets can soak the gravy from both sides.
- Cooking this way for 4-5 minutes on low heat, sprinkle chopped coriander leaves over the gravy, and gently mix it. Immediately turn off the heat.
- Fish in lemon butter garlic sauce is ready, I serve it with butter tossed herbed rice, you can serve it with bread toast too.
Notes
- Use pepper and salt as per your taste.
- Carefully flip the fish as basa fillets tend to get broken.
